How to make banana bread donuts with chocolate chips and pecans with Nourishing Amy
We’ve been doing a lot of vegan baking in lockdown and despite the craziness of the world right now, we’re committed to sharing the love with some of our favourite and most delicious vegan banana bread recipes. Seeing as we have a little (ok maybe a lot) more time on our hands, these recipes are getting more creative than ever!
We’re a huge fan of banana bread (especially the vegan and gluten free kind), but we wanted to try something a little different so we teamed up with Amy from vegan food blog Nourishing Amy to bring you this mouthwatering banana bread donut recipe. It’s made using our healthy banana bread mix and is decorated with chocolate and pecans, so don’t worry, there’s lots of treats in store.

How to make banana bread donuts with chocolate and pecans: (heading)
What you’ll need:
1 pack Superfood Bakery organic banana bread loaf mix
290g mashed banana
50g sunflower oil
50g chocolate chips
50g crushes pecans
To decorate:
100g chocolate, melted
Crushed pecans (approx. 20g)
What to do:
1. Preheat oven to 160Fan/180*C and grease 12 donut holes.
2. Stir together the banana bread loaf mix, mashed banana and sunflower oil in a bowl until combined. Add in the chocolate chips and pecans and stir again.
3. Divide the batter between the donut holes (about 2 large tablespoons of batter per donut) and bake for 15-17 minutes or until an inserted skewer comes out clean.
4. Allow to cool fully. Melt the chocolate and place in a bowl. Dip each donut into the chocolate and sprinkle over some crushed pecans.
