Lemon and poppy loaf with mascarpone and passion fruit frosting

Lemon and poppy loaf with mascarpone and passion fruit frosting 


INGREDIENTS

* 1 pack of Superfood Bakery Zesty Cheer Lemon & Poppy Loaf mix

* 2 lemons (juice and zest)

* 2 eggs 

* 100g unsalted butter 


For the icing:

* 100 g mascarpone 

* 100 ml double cream 

* 2 tbsp icing sugar 

* 1 tbsp mango and passion fruit coulis 


To decorate:

* Mango and passion fruit coulis 

* Honey 

* Fresh clementines 


Instructions:

  1. Bake lemon and poppy loaf according to packet instructions. Let it cool completely on a wire rack.
  2. To make the icing beat the mascarpone, adding double cream and icing sugar until smooth and creamy.
  3. To enhance the flavour stir in 1 tbsp of mango and passion fruit coulis.
  4. Spread the icing on the loaf using a spatula or a spoon. 
  5. Drizzle with honey, passion fruit and mango coulis and top with fresh clementines.
